Is there a possibility to group cookies, e.g. "required", functional" and "targeting" and show only those groups in the cookie message instead of every single cookie?

Sure, that's easy

Instead of defining individual cookies in the "Cookie Removal" section, define the domains in the "Cookie Definitions" section. Here's an example that I use in testing:

Issuing Domain: ".twitter.com .facebook.com .google.com"
Cookie Name: "Social Sharing"
Description: "Allowing this type of cookie will enable use of social sharing links within articles."
Required: No
Access Level: whatever access level you created for this type of cookie.

Prerequisites: You must have created an access level for this type of cookie, and you must have assigned the plugins/modules that set these cookies to that access level.
